Bitter gourd lollipop (Recipe-1)


Preparation time: 05 minutes
Cooking time: 15 minutes
Serving: For 3-4 people

Ingredients-1:

  • Bitter gourd 200 grams
  • Potato 1 big boiled
  • Onion 1 finely chopped
  • Garlic 1 teaspoon chopped
  • Salt to taste
  • Red chilli 1 teaspoon
  • Turmeric 1/4 teaspoon
  • Chat masala 1 teaspoon
  • Flour 1 teaspoon
  • Bed combs 1 cup
  • Oil for frying

Method-1: 

Cut bitter gourd, add salt and wash it. Fry it in oil till it becomes crispy. Put oil in a pan, add garlic, onion, green chilli and add potatoes. Mix all the spices and add crispy bitter gourd. Let it cool. Then shape it into a lollipop with your hands. Prepare a batter of flour. Dip it in it and apply a layer of bread crumbs. Then fry it. Bitter gourd lollipop is ready.

Karela Chorchori (Recipe-2)


Preparation time: 10 minutes
Cooking time: 20 minutes
Servings: For 3-4 people

Ingredients-2 :


  • 1 quarter of bitter gourd
  • 1 potato
  • Mustard oil- 2 tablespoons
  • Onion
  • Garlic clove 4
  • 2 bay leaves
  • 2 dried red chillies
  • Panchphoran masala- 1 teaspoon (fennel, cumin, fenugreek seeds, mustard, nigella seeds)
  • Salt to taste
  • Mustard paste - 2 teaspoons yellow mustard, 1 teaspoon mustard, 2 green chillies (finely prepared) ground by adding a little water.

Method-2: 

Cut the bitter gourd into round slices without peeling it and fry it in mustard oil. Along with this, cut potatoes into small pieces. Cut onion and garlic into small pieces. Fry them as well. Again, put oil in the pan and when it gets hot, add panchphoran masala, bay leaf, red dried chili. When the bitter gourd is roasted, add mustard paste, salt and turmeric as well. After 2-4 minutes, add fried vegetables and 1 bowl of water as well. Cover and cook for 5 minutes and turn off the gas. The recipe is ready.

Crispy Bitter Gourd (Recipe-3)


Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serving: For 2-3 people

Ingredients-3:


  • Bitter gourd 1 quarter kilo
  • Salt- 1 teaspoon
  • Red chili powder- 1/2 teaspoon
  • Dry mango powder- 1 teaspoon
  • Semolina- 2 tablespoons
  • Gram flour- 3 tablespoons
  • Garam masala- 1/4 teaspoon
  • Chat masala
  • Lemon
  • Oil- for frying

Method-3:

Firstly, cut the bitter gourd into thin long pieces, add salt and keep it aside for 10 minutes. Then wash it well and remove all the salt. Then squeeze it lightly and remove the water. Then add all the ingredients and fry in oil (keep in mind not to add water). Then add lemon juice and chaat masala and eat it yourself and serve crispy bitter gourd.

Sweet and Sour Cashew Bitter Gourd (Recipe-4)


Preparation Time: 10 minutes
Cooking Time: 20 minutes
Servings: 4-5 people

Ingredients-4 :


  • 7 bitter gourds
  • 1 teaspoon salt
  • ¼ teaspoon turmeric powder
  • 60 ml oil for vegetable
  • 1/2 teaspoon cumin seeds
  • 10 cashews
  • 20 raisins
  • 4 tablespoons ground coconut
  • 1 teaspoon red chili powder
  • 1½ teaspoon coriander powder
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1 teaspoon dry mango powder
  • 3 tablespoons jaggery, sweet dates dry ginger
  • 3 teaspoons water.

Method-4 : 

Peel the bitter gourd and cut it into small pieces, then add turmeric and salt and keep it for 10 minutes. Now wash the bitter gourd two-three times with clean water and squeeze it. Then fry it in oil on medium flame till it turns pink. Take out the bitter gourd in a plate. Now crackle cumin seeds in the remaining oil, then fry cashews till they turn pink. Now add coconut powder and raisins. Then add roasted bitter gourd, bitter gourd peel and all the ingredients (except dry mango powder and sweet dry ginger). Add some water, cover and cook for 10 minutes. Finally add dry mango powder, sweet dry ginger and cover again and cook for 1 minute. Serve by adding chopped coriander leaves.
