Hello friends, welcome to my website. Today I will teach you how to make Litti Chokha, a famous dish of Bihar. Different dishes are made in different regions of India. Litti Chokha is a famous dish of Bihar state of India.
In Bihar, this dish is called Litti Chokha, but this dish is made everywhere, but their names are different, for example, in Rajasthan, this dish is called Dal Baati.
Litti is round in shape made from flour. And Chokha is made by frying brinjal, potato and tomato and adding spices and mustard oil to it. Litti Chokha tastes very good if made in the traditional way, but you can easily make Litti Chokha on a gas stove as well. To make Litti Chokha in the traditional way, Litti is roasted on cow dung cakes and to make Chokha, brinjal and tomato are roasted on cow dung cakes.

Things You Will Need

Ingredients required for litti or bati –
  • 2 cups wheat flour
  • ½ teaspoon celery,
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon fennel
  • 2 teaspoon ghee,
  • salt (according to taste)

Ingredients required for choka –
  • 5 medium sized boiled potatoes
  • 2 large round brinjals
  • 2 medium sized tomatoes
  • 4 - 5 peeled garlic cloves
  • 2 - 4 chopped green chillies,
  • 1 tablespoon finely chopped coriander leaves
  • 2 teaspoons mustard oil
  • salt according to taste

Method

Today I will tell you the recipe of making litti chokha. To make litti chokha, first of all you have to take two cups of wheat flour, add salt according to taste, add two big spoons of ghee and one small spoon of celery, half spoon of turmeric powder and half spoon of fennel.
Now you have to take flour in a big vessel and mix celery, ghee, salt, turmeric, fennel in it. Now add water to this flour and knead it well. The dough should be soft. You have to knead the dough well and keep it covered with a cloth for 10 to 15 minutes.
Now you have to make dough balls and make small balls. You have to make small balls from all the flour and keep them in a vessel.
Now if you have cow dung cakes, then keep them for burning. If you don't have cow dung cakes, then put these flour balls in the oven to roast. After cooking in the oven for 5 minutes, you have to turn the litti again and again so that it doesn't burn.
You have to keep the gas on low flame and keep turning it again and again. When your litti is completely cooked, then you have to take ghee in a bowl and cut the litti into pieces and dip it in the ghee. Now your litti is ready.
Now we should prepare to make chokha. To make chokha, first of all you have to boil four to five potatoes and remove their peel. Now you have to take two brinjals and two tomatoes and 4
green chillies and put them on an iron mesh and put them on the gas for roasting. Now you have to roast the brinjals, chillies and tomatoes very well. When the tomatoes, chillies and brinjals are cooked well, then you have to take them off the gas and peel the brinjals, chillies and tomatoes.

Now you have to put brinjal, 
chilli, tomato and potato in the mixer. You also have to add garlic. You should not add raw garlic. Before adding garlic, you have to fry garlic along with tomato and brinjal. Now you have to mix all these in the mixer and when it is mixed, take it out in a vessel and add chili powder, salt and garam masala to this mixture and add two spoons of mustard oil on top.
Mustard oil gives a different taste to chokha. Now add coriander leaves on top.
Now your litti chokha is ready. You can feed it to the guest and you can also taste it yourself.
